Apples, Almond Butter, Blueberries & Pistachios

My favorite non-egg Whole30 breakfast! A deliciously crisp apple paired with almond butter, topped with blueberries and pistachios.  A satisfying breakfast that will last with you longer than you’d think!  Less of a recipe here and more of an inspiration for something other than eggs for breakfast. 

While I’m sure you’ve had an apple with almond butter, or at least with peanut butter, topping with blueberries and pistachios probably doesn’t come top of mind. But I promise this combination is fantastic. The crisp apple, the creamy almond butter, the juicy blueberries married with the crunch of the pistachios is to die for.  

If you’re someone who prefers a heartier breakfast this is certainly a fantastic snack option as well.  The big debate is which apple is best.  I absolutely love apples and I am super picky about which ones I’ll eat.  To me, red delicious just aren’t real apples so I vote for skipping those.  A granny smith would be ok, the sourness would be balanced by the almond butter and blueberries. A fiji is a little bland, I’d want something sweeter.  So in my opinion you need to go for a honeycrisp or my latest favorite, envy apples. It’s interesting moving to Chicago from Connecticut how many different apple varieties there are! I’m in love with some of these midwest offerings!

As for the almond butter, if you’re doing Whole30, be sure to check your ingredients.  There’s no reason your almond butter should have anything other than almonds in it! I’ve found compliant brands at Whole Foods but also at Stop & Shop.  Justins is a compliant brand, as long as you don’t pick one of the fancy maple syrup ones, but can be pricey. So just read your labels there are options out there that won’t break the bank. In fact, you can even make it yourself by roasting plain almonds and blending them until smooth!  I have not done this myself, much to the dismay of my older sister who is an almond connoisseur, but making your own nut butter definitely is doable, cost effective and fairly easy!

  • 1 apple diced
  • 1 tbsp almond butter
  • Handful of blueberries
  • ¼ cup of pistachios


  • Mix all ingredients and enjoy!
